The Austrians didn’t officially track this and they ruled Krakow during those years. The only way to extrapolate the information would be from synagogue records. Here’s a site that probably has as much information as any:
Otherwise, I’d work with the Polish Archives and Museum in Chicago to extrapolate the information.
The University of California Irvine site has a web section on Krakow. You can search for records online. They also have a page with the number of births, marriages and deaths they have recorded from 1798-1892 that may give you an idea of population statistics. It’s at
